Meatless Recipes

Whether you like to have meatless Mondays or need ideas for Fridays during lent, here's some of our recipes that will fit in with your diet.

1 La Tapatia tortilla or wrap
2 tablespoons of peanut butter
1/2 of a banana, sliced

Peanut Butter & Banana Snack

Forget the bread! Use a tortilla or wrap to make this pb&b treat.

1 La Tapatia or Sol de Oro Tortilla
¼ cup sauce (marinara, pesto, olive oil and garlic, barbecue sauce...any kind you love!)
⅓ cup or less shredded/crumbled cheese (mozzarella, cheddar, goat, feta)
Any toppings you might like!

Pizza-tilla

Pizza night can be custom made for everyone with our tortillas. Everyone can choose their favorite tortilla (gorditas, low carb, protein packed, multigrain...they all make perfect pizzas!) and any toppings their heart desires. Meatless pizzas can be piled high with veggies and various cheeses. Warning: these pizzatillas are so delicious you may find yourself slightly obsessed.

12 La Tapatia or Sol de Oro tortillas (flour or corn)
3 potatoes
Water
Salt and pepper to taste
*Oil, if you prefer to fry your flautas
*Additional add-ins as desired (see #5 below)
Makes 12 flautas.

Potato Flautas

“Papas” (the Spanish word for potatoes) in any form are always amazing: fried, crisp, mashed, baked. Potatoes are a carb lovers dream. Add them to a plate of traditional Mexican food and you’ll discover how well they pair with salsa, beans, and of course tortillas! This easy recipe is inexpensive and a great meatless option.

1 Wrap (or Tortilla)
2 Eggs
1 cup of spinach
1/2 red bell pepper, chopped
1 Tablespoon of bacon bits (if desired)
1/4 cup shredded reduced fat jack cheese
Italian Seasoning and Pepper to taste
Avocado Oil (Olive Oil works just as well!)"Placeholder Image

Power Breakfast Wrap

Start your day with a punch! Use any of our multigrain tortillas or wraps and skip the bacon in this recipe for a hearty meatless breakfast.

12 Tostadas
2 small bottles of Clamato
2 cucumbers, peeled & diced
1/2 red onion, diced
2 bunches of cilantro, chopped
5 roma tomatoes, diced
4 key limes (juiced)
1 bag cooked, peeled, no tail shrimp
Hot sauce or ketchup to taste

For Garnish:
Sliced avocado
Chopped lettuce

Shrimp "ceviche" tostadas

This is a spinoff of our shrimp cocktail recipe. Using cooked shrimp will allow you to skip the traditional ceviche aspect of cooking your shrimp in the citrus juices. It's a flavorful combination that will leave you tempted to eat the entire bowl!

Sweet Fruit Crepe

Crepe-inspired, sweet fruit tortilla treat to satisfy your sweet tooth any time of day.

4 to 6 La Tapatia Gorditas or Golden Sun Wraps
1 cup cooked quinoa
1 red bell pepper chopped into bite size pieces
1 bunch of cilantro chopped
1 small white onion chopped
1 can of sweet corn
1 can of black beans (drained & rinsed)
1 lemon or lime juice to taste
Oregano to taste
Salt and Pepper to taste

Toasted Party Wrap

This is a quick party dish filled with flavors that will make your taste buds dance. The protein of the black bean and quinoa, combined with the authentic flavor of the Gorditas will leave you satisfied and full of energy.
